MEATLESS MONDAYS

Happy Halloween! 

While many of you are preparing for all of the candy and going door to door, being mindful of those treats could be the trick to a healthy Halloween.
Halloween is a fun time of year, but the sugar and the calories can sneak up on you fast. When we kick off Halloween, we're kicking off the season of weight gain.
With the holidays fast approaching, you can be active on Halloween. Walk around the neighborhood for a couple of laps. Mom and dad, go with your kids and get some exercise with them when trick-or-treating and that way you guys can burn off that Halloween candy.
Kids keep to one to two pieces a day. I know it will be hard, but it will last longer.
Always eat a good supper before you go trick or treating with a good source of protein. Whether it's chili or some of the super foods you can buy at the farmers market.
While you're eating all of this extra candy, cut back on your soft drinks, sweet tea, juice, and other sugary drinks.
Whether you're trick-or-treating in the neighborhood, or attending a church or fall festival, remember to move those feet and go easy on the treats.
Meatless Monday Recipe: 

Squash Sunchoke Mac & Cheese  (From Lisa of Cold Cereal and Toast)

Butternut squash is roasted and mashed with sunchokes in this root vegetable crowd pleaser. A Dijon mustard roux serves as the base for a luscious sauce in this hearty mac and cheese, finished perfectly with crunchy whole-wheat breadcrumbs. Serves 10.
  • 1/2 small butternut squash, seeded
  • 2 medium sunchokes*, peeled
  • 12 ounces elbow macaroni
  • salt, to taste
  • 1/4 teaspoon pepper
  • 2 tablespoons unsalted butter
  • 2 tablespoons all purpose flour
  • 1 teaspoon Dijon mustard
  • 1 3/4 cups nonfat milk
  • 1/4 cup low sodium vegetable stock
  • 4 ounces Muenster cheese, grated
  • 4 ounces cheddar cheese, grated
  • 1/2 cup whole-wheat breadcrumbs
*Also known as Jerusalem artichokes, sunchokes can be found at farmer’s markets or in the gourd section of vegetable aisle in some grocery stores.
Preheat an oven to 450 degrees. Prepare a baking sheet with a layer of aluminum foil. Lay the squash, cut side down, on the baking sheet. Add the peeled sunchokes to the sheet, place it in the oven and bake for about 25-30 minutes, or until the squash is tender when pierced with a butter knife.
Scoop the squash’s flesh into a large mixing bowl and mash it using a fork. Add the roasted sunchokes, mashing to incorporate them with the butternut squash. For the smoothest consistency, add the squash sunchoke mash to a food processor or blender and puree if desired.
Place a large pot of salted water over medium-high heat. Cook the pasta according to package directions, or until al dente, drain, return to the pot, remove from heat and set aside to cool.
Place a medium saucepan over medium heat. Melt the butter in the saucepan, then whisk in the flour and mustard. Continue whisking over medium heat for about 1 minute, then slowly add in the milk, stirring constantly. Bring the mixture to a simmer, lower heat to medium-low and keep simmering, whisking frequently, for 5-6 minutes, or until the mixture has thickened to the consistency of heavy cream.
Season the sauce with the pepper and 1/2 teaspoon salt. Add the squash sunchoke mash, Muenster and cheddar, stirring with a wooden spoon until the cheese has melted.
Pour the cheese sauce into the cooked macaroni, stirring to ensure all ingredients are evenly incorporated. Preheat your broiler.
Pour the macaroni into a medium baking dish and top with the breadcrumbs. Broil for about 10 minutes, or until the bubbly with brown edges. Enjoy!
Monday Motivator: Scare Up Some Active Fun
Halloween can be a sweet holiday or a caloric nightmare. Balance the good with the bad today by thinking before you bite and enjoying outdoor activities. Try building a scarecrow with your kids, picking apples or attending local Halloween activities like parades or haunted houses.

Fill Your Daily Whole Grains "Gap"
Whole grains are everywhere....in breakfast cereals, breads, side dishes like grains and pasta, soups snacks, and baked goods. With such availability and the good news about their health benefits, you'd think we would all be meeting our daily requirements for three servings of whole grains a day. Unfortunately, we are a long way off. Consumers feel they are getting more whole grains than they really are. By missing your mark for whole grains, you are losing out on an opportunity to gain many health benefits linked with these foods. There are lots of healthy compounds in whole grains; they are a nutrient dense power house. When whole grains are refined like so much of our food, there is only a fraction of the phytonutrients, vitamins and minerals that there is in the whole grain.

Benefits from moderate (about 3 servings per day) whole grain intake:

  • Decreased risk of cardiovascular disease (such as decreased risk of hypertension, decreased LDL (bad) cholesterol levels, and improved blood vessel function.
  • Decreased risk of stroke.
  • Decreased risk of obesity.
  • Decreased risk of metabolic syndrome (factors that increase your risk for coronary heart disease and type 2 diabetes).
  • Decreased risk of type 2 diabetes.
  • Decreased risk of colorectal cancer.
  • Decrease risk of total mortality.

Meatless Monday Recipe: Bulgur Pilaf with Chickpeas and Herbs ( adapted from Martha Rose Shulman)
    Serve as a side dish or at the center of your plate – this dish is satisfying and high in protein.

INGREDIENTS

1 cup dried chickpeas, soaked for 6 hours or overnight in 1 quart water
Salt
1 cup coarse bulgur
2 Tbsp extra virgin olive oil
1 bunch scallions, finely chopped
2 large garlic cloves, minced
¼ cup finely chopped flat-leaf parsley, or a combination of parsley and dill
2 Tbsp finely chopped fresh mint
Juice of 1 lemon
Ground black pepper

INSTRUCTIONS

1. Drain the soaked chickpeas and place in a pot with 1 quart water.  Bring to a boil, reduce the heat, and simmer for 1 hour.  Add 1 teaspoon salt to taste and continue to simmer for 30 minutes to 1 hour, or until the chickpeas are tender.

2. Place the bulgur in a 2-quart bowl.  Place a sieve over the bowl and drain the chickpeas so that the hot broth covers the bulgur.  Set the chickpeas aside.  Cover the bowl and allow the bulgur to sit until fluffy, 20 to 30 minutes.  Drain over a sieve, and press on the bulgur with your hands to squeeze out excess liquid.

3. Heat 1 tablespoon of the oil in a large, heavy skillet over medium heat.  Add the scallions.  Cook, stirring, until tender, 2 to 3 minutes.  Stir in the garlic and continue to cook until fragrant, 30 seconds to 1 minute.  Stir in the bulgur and chickpeas.  Add the herbs and the remaining 1 tablespoon of oil and toss together.  Remove from heat, add the lemon juice and black pepper.  Taste and adjust the salt.  Add more lemon juice if desired.  Serve hot or at room temperature. 
Advanced Preparation: You can make the pilaf hours ahead, but do not add the herbs.  Reheat in a microwave or in a nonstick skillet over medium heat, then stir in the herbs and serve.
Per serving (based on 4 servings): 360 calories, 14g protein, 58g carbohydrates, 15g fiber, 10g fat, 1g saturated fat, 0mg cholesterol, 60 mg sodium.

Halloween Treats & Tricks to Stay on Track!

If you are like most of us you are going to be stocking up on candy for the trick-or-treaters! It is a great Holiday - BUT - it is a ton of temptation when you are trying to lose weight and eat healthy! Here are a couple of things to remember; candy can be calorie dense which means the calories add up quickly. Chocolate tends to be higher in fat so that increases the calories as well. Better choices for low fat or fat free treats are candy corn, twizzlers or hard candies because not only are they lower in fat but typically the serving size is bigger. Fun Size candy bars are always a good option because they are portion controlled.

My favorite 'tricks' for keeping on track are:

* Wait until Halloween to buy the candy so you won't be tempted to open it early!
* Buy only what you think you can give away to the kids!
* Take the left over candy to work, school or simply give it away to get it out of the house!

0 pounds in 1 night!

Monday Motivator: Feel Full With Fiber

Fiber has been shown to improve digestion, regulate blood sugar and help you feel fuller, longer. Get your recommended 25-30 grams each day with several servings of fiber-rich foods like whole grains, fruits, vegetables and legumes.

Picture Your Plate
Now you don't have to climb a pyramid to understand the basics of a healthy daily diet. Thanks to the USDA's new choosemyplate.gov initiative, it couldn't be simpler to eat well. Just fill a quarter of your plate with fruits, a quarter with veggies, a quarter with grains and a quarter with protein. Add a serving of low-fat dairy and.....eureka! You've achieved the ideal healthy meal.

  In addition to being mindful of the food on your plate, these key dietary guidelines released by the USDA will keep you and your family on track.
  •  Enjoy your food, but eat less.
  • Avoid oversize portions.
  • Drink water instead of sugary drinks.
  • Make at least half your grains whole grains.
  • Switch to fat-free or low-fat (1% ) milk.
  • Compare sodium in foods like soup, bread, and frozen meals then choose the lowest numbers.



Meatless Monday Recipe: Butternut Squash Bisque (adapted from The Blooming Platter Cookbook ) 
Just in time for cozy autumn cooking, this fantastic recipe for Butternut Squash Bisque is one of many sensational seasonal recipes from The Blooming Platter Cookbook by Betsy DiJulio. Betsy has a unique flair for turning everyday ingredients into something beautiful, tasty, and easy to prepare. She adds an exquisite Cranberry Gremolata topping to this dish, adding a delightful crunch.

Ingredients:
1 Tbs. olive oil
1/2 cup chopped onion
1 clove garlic
1 small butternut squash
2 1/2 cups vegetable stock
4 (4-inch) stalks fresh rosemary
2 bay leaves
sea salt & freshly ground black pepper

Cranberry Gremolata Topping (optional):
The gremolata is inspired by the traditional Italian condiment, typically sprinkled on soups and stews and made with lemon zest, parsley, and garlic.
1/4 cup coarsely chopped walnuts or pecans
1/4 cup chopped fresh cranberries
1 tsp. minced jalapeño
2 tsp. fresh orange zest
pinch sea salt
pinch natural sugar

Directions:
  1. If making the Cranberry Gremolata topping, combine all the ingredients in a small bowl, mix well, and set aside.
  2. Peel the squash, remove seeds, and cut into 1-inch cubes; heat oil in large skillet over medium-high heat.
  3. Add onion and sauté until softened, 3 to 5 minutes; add garlic and sauté until soft and slightly golden, 1 to 2 minutes; add squash, stock, rosemary, and bay leaves; simmer, stirring occasionally, until squash is tender, about 10 minutes.
  4. Remove and discard rosemary stalks and bay leaves, then transfer squash mixture to food processor and process until almost smooth, scraping down sides of bowl as necessary.
  5. Return puree to skillet and heat through, stirring occasionally.
  6. Season to taste with salt and pepper, and serve warm topped with Cranberry Gremolata if desired.
Monday Motivator: Have a Supermarket Strategy

Spend less time and money in the grocery store by having a plan of attack. Shape a shopping list around this week’s meals and stick to it. Dodge unhealthy temptations by avoiding the supermarket when you’re tired or hungry.

One Day a Week Cut the Meat

2 tablespoons extra-virgin olive oil
½ medium onion, minced
1 pound grape or cherry tomatoes, cut in half
1 pound orecchiette or small shells- multi-grain or whole grain, if possible
Ricotta salata cheese, finely crumbled or grated- you can substitute with grated Parmesan or Pecorino Romano cheese
Salt and pepper
1. Bring 4 quarts water to boil in a large pot for cooking the edamame and the pasta.
2. Add the edamame to the boiling water and simmer for two minutes. Transfer the edamame with a slotted spoon to a large bowl. Set aside. Keep pot of water on the heat.
3. Heat the oil in a large skillet. Add the onion and saute over medium heat until translucent, about 3 minutes. Stir in the tomatoes and salt and pepper to taste and simmer until the tomatoes soften slightly but do not lose their shape, about 4 minutes.
4. Stir in the edamame. Cook until the beans are completely tender, 2 to 3 minutes. Adjust the seasonings.
5. Bring the pot of water back to boiling and add the orecchiette or small shells. Cook until al dente and drain.
6. Toss the pasta with the tomato-edamame sauce and mix well. Divide among individual bowls and sprinkle with cheese. Serve immediately.
