MEATLESS MONDAY


One Step At a Time....
You Can Go Meatless One Day For All Three Meals

  • During World War I, the U.S. Food Administration urged families to reduce consumption of key staples to aid the war effort. “Food Will Win the War,” the government proclaimed, and “Meatless Monday” and “Wheatless Wednesday” were introduced to encourage Americans to do their part.
  • Herbert Hoover, then head of the Food Administration, spearheaded implementation of the campaign. In addition to advertising, his office created and distributed recipe booklets and menus in newspapers, magazines and pamphlets.
  • The effect was overwhelming. Some 10 million families, 7,000 hotels and nearly 425,000 food dealers pledged to observe national meatless days. In November 1917, New York City hotels saved some 116 tons of meat over the course of just one week. According to a 1929 Saturday Evening Post article, “Americans began to look seriously into the question of what and how much they were eating. Lots of people discovered for the first time that they could eat less and feel no worse – frequently for the better”.
  • The campaign returned during World War II and beyond, when Presidents Franklin D. Roosevelt and Harry S. Truman used rationing to help feed war-ravaged Europe.
  • Meatless Monday was revived in 2003 by former ad man turned health advocate Sid Lerner, who saw the prevalence of preventable illnesses associated with excessive meat consumption and decided to introduce Meatless Monday as a public health awareness campaign. The initiative was backed by the Johns Hopkins Bloomberg School of Public Health’s Center for a Livable Future and endorsed by 30 schools of public health.
  • Meatless Monday has since turned into a global movement with a wide network of participating hospitals, schools, worksites and restaurants around the globe. The simplicity of Meatless Monday’s message has allowed the campaign to once again become part of the American lexicon.

Healthy Meatless Recipe: Pasta with Roasted

Load your plate with color and layers of flavor. Roasted cauliflower mixes perfectly with  sweet grape tomatoes and peppery arugula. Pasta night just got a little more interesting.Serves 4Ingredients
Kosher salt 
1 medium head cauliflower, cored and cut into 3/4-inch florets 
1 pint grape tomatoes 
3 Tbs. extra-virgin olive oil 
Freshly ground black pepper 
9 large fresh sage leaves 
4 large cloves garlic, peeled 
12 oz. dried orecchiette 
5 oz. baby arugula (5 lightly packed cups) 
3/4 cup grated Parmigiano-Reggiano 




Directions

Position a rack in the lower third of the oven and heat the oven to 425°F. Bring a large pot of well-salted water to a boil.
Toss the cauliflower, tomatoes, oil, 3/4 tsp. salt, and 1/2 tsp. pepper on a rimmed baking sheet; spread in a single layer. Roast, stirring once or twice, until the cauliflower begins to turn golden and tender, about 15 minutes.
Meanwhile, pulse the sage and garlic in a food processor until minced. Once the cauliflower is golden, toss the herb mixture into the vegetables and continue to roast until fragrant and the cauliflower is golden brown, 5 to 7 minutes.
Boil the orecchiette until al dente, 9 to 10 minutes. Reserve 1 cup pasta-cooking water. Drain the pasta and return it to the pot. Stir in the roasted cauliflower mixture, arugula, cheese, and enough pasta water to moisten. Season to taste with salt and pepper.
