Serving healthy meals on a budget can be challenging. Some people save money by adding meatless meals to their weekly menus. But meatless meals can be good for your health, not just your budget.
Meatless meals are built around vegetables, beans and grains. This can save money, since meat tends to be more expensive. A plant-based diet — which emphasizes fruits and vegetables, grains, beans and legumes, and nuts — is also rich in fiber, vitamins and other nutrients. This type of diet can reduce the risk of heart disease.
The Mayo Clinic also cites a National Cancer Institute study of 500,000 people that found those who ate 4 ounces (113 grams) of red meat or more daily were 30 percent more likely to have died of any cause during a 10-year period than were those who consumed less. Sausage, luncheon meats and other processed meats also increased the risk. Those who ate mostly poultry or fish had a lower risk of death.
When your meals include meat, don't overindulge. As appealing as a big steak may be, a healthier choice is to choose lean cuts of meat and avoid oversized portions.
Although you may not be able to imagine giving up bacon or cheeseburgers, switching over to a plant-based diet can have health and nutritional advantages. In many cases, you can improve your risk factors for a variety of diseases and health problems by simply reducing the amount of meat that you eat, even if you don’t give it up entirely.




Eating a vegetarian diet provides several health benefits including those associated with weight control. According to L. Bellows, food and nutrition specialist at Colorado State University Extension, because they eat a plant-based diet, vegetarians tend to consume fewer calories, less fat and have a lower body mass index. BMI is an estimate of body-fat levels. Animal foods, including meat and dairy products, are high in fat, especially saturated fat and cholesterol. The additional fat in these foods not only increase calorie consumption, they elevate the risk of chronic disease.

According to the Physicians Committee for Responsible Medicine, giving up meat can reduce your risks of cancer, heart disease, high blood pressure, diabetes, kidney stones, gallstones and osteoporosis. Further, ChooseMyPlate.gov from the USDA notes that eating more fruits and vegetables can cut risks of high cholesterol, heart attack and stroke. The drop in such risk factors is partly due to lower cholesterol intake, since plant-based food items are cholesterol-free and dairy products tend to be lower in cholesterol than meat.

A vegetarian diet is healthiest when it’s balanced and includes daily servings of all major food groups, including fruits, vegetables, lean proteins, grains and dairy products. Before you make the switch to a meatless diet, talk with your physician or a registered dietitian about how to meet all of your nutritional needs, especially if you deal with a chronic health condition or have other dietary restrictions.

Healthy Meatless Recipe:

Five-Vegetable Lentil Soup Recipe

(Adapted from Fit Bottom Eats )
Ingredients:
  • 10 cups reduced-sodium vegetable broth
  • 1½ cups lentils
  • 1 large onion diced
  • 4 stalks celery with leaves chopped
  • 4 large carrots diced
  • 1T tomato paste
  • 1 medium bunch kale, chopped
  • 1t chopped garlic
  • 1t fresh, ground pepper
  • 1T good olive oil
  • ¼ cup chopped fresh, flat leaf parsley

Directions:
  1. Soak and wash lentils in colander until clean.
  2. Meanwhile, sauté the onions, celery and carrots with olive oil in 10- to 12-quart soup pot until golden. Then, add garlic and sauté for 1 minute being careful not to burn garlic. Add tomato paste, broth, lentils, and pepper.
  3. Simmer until lentils are soft and tender (approximately 1½ hour)
  4. Turn heat off. Add the chopped kale at the very end stirring until well incorporated and, then, add fresh, chopped parsley.
  5. Makes 12 servings

Thursday Wellness: Feeling Stressed?

The first thing to do is recognize the early signs of stress. When you have identified your triggers then you can take action to calm yourself.

  • Recognize the signs: Loss of appetite, increased appetite, headaches, crying, sleeplessness, and oversleeping are all signs that you may be too stressed.
  • Relax: Deep breathing, exercise, and meditation are all helpful.
  • Control what you can: Focus on what you can get done and then let the rest of it go. You will never be able to accomplish everything you want to.
  • Exercise: The stress response is also known as the "fight or flight" response, meaning that when you feel stress, your body is ready for action. Exercising has been shown to help with stress and anxiety.

One of the hardest things for many women to do is to think of themselves first, but taking care of yourself and reducing your stress is a great way to be present and available to the people around you.

Stress Relieving Tips For the Mind
    1. Cultivate gratitude. Things will go wrong throughout our workday, or at least not according to plan. This is inevitable. We can take the sting out of these negative events by focusing on what’s great in our life. Each evening, write down three things you are grateful for. They can be as simple as seeing a gorgeous sunrise or being complimented on your new pair of shoes.
2. Meditate regularly. A consistent mediaiton practice — even if it’s only five minutes a day — may help lower blood pressure , and can help us control the thoughts that can trigger stress. The next time you get stressed because your boss just added another task to your already overflowing to do list, stop and take a breath. Shake out your body, sit back down and meditate for five minutes.
  1. Learn to say “no”. Being overbooked, overworked, and overcommitted will lead to stress. We often feel obligated to say “yes” to everything for fear we won’t be liked. But the greatest act of stress relief is exercising your right to say no. You can be polite but firm: Explain to others that you are overcommitted and that you must say no. And yes, you can even tell your boss “no”; just explain that one more project will mean the quality of your work will drop. Negotiate priorities.

Fitness Friday: It's Grow Time!


I would like to share this story with you and are you taking care of yourself?

Healthy as a Horse

I live close to the Del Mar Racetrack, one of the biggest horseracing facilities in the country, where “the turf meets the surf.”A week before the start of the race season, a good friend of mine took me down to the track to visit the owner of a prized racehorse.
The owner told me how he had made a science of the exact nutritional value in every bite that horse ate—what was perfect for its digestion, energy, and dental care. He explained how he had only the best licensed veterinarian check the horse thoroughly each week, how he exercised the horse twice daily, how he made sure the horse had the appropriate social interaction with other horses to keep his spirit up.
He emphasized how the horse’s comfort, needs, and health were in need of constant attention to ensure it was happy and able to perform at its best. I was impressed with this man’s nutritional acumen, attentiveness, and discipline … until the trainer walked in with his lunch. McDonald’s hamburgers, fries, and a giant soda.
I had already noticed that the owner probably didn’t exercise. After seeing the meal, I understood that poor eating habits had contributed to his weight. So I asked him when he had last visited the doctor for a checkup. His answer? He hadn’t been in years. He had his horse checked every week, but he had not seen a doctor for years.
Do you get my point here? Here was a guy with a billion-dollar body—one priceless to his family and friends—yet he cared more for his horse’s health than his own. Insane. Sadly, he is not alone. I know people who feed their dogs more carefully than they do their own kids. Can you imagine that?!
These examples can be contributed to one thing: a poor health and fitness philosophy.
I don’t want you to fall into this same trap. I want you to revitalize your commitment to being fit and healthy. You don’t want to be the guy or gal with the highest rank or title, with the most cars, with the biggest house … in the graveyard. Wellness Wednesday: Are you Giving Your Kids Asthma?

This article by journalist Sloan Barnett appeared in the Huffington Post Healthy Living section. When her experience with son Spencer terrified their family, Sloan became passionate about eliminating the strongest asthma inducing chemicals from their home. She studied intently to find the reason for his attack. Do you know a child with asthma?
My son Spencer had just turned three when, one day, I noticed he was coughing a lot. At first, I didn’t think anything of it. Kids get sick. I told him to lie down, thinking he’d be fine — it was just a cough. A short time later, I realized that his heart was pounding, as if it were trying to beat right out of his chest.

Terrified, my husband, Roger, and I rushed him to the hospital. We spent the next two nights in the ICU. The doctors told us he had something called reactive airways dysfunction syndrome — a form of asthma. Neither my husband nor I had any family history of asthma, going back four generations. So we concluded that the cause was environmental.
It didn’t take long to discover that the U.S. is in the midst of an asthma epidemic. The number of people diagnosed with asthma grew by 4.3 million in the last decade. About one in 10 American children currently suffer from asthma — a nearly threefold increase from 3.6 percent in 1980. A suspected cause of these stunning changes?
At least six well-designed epidemiological studies have pointed to one answer: A strong link between the use of certain cleaning products and asthma. That stopped me cold. The cause of my son’s asthma may have been me. I may have been poisoning my own son.
The good news is that this is one area where easy, affordable solutions are available. First and foremost, you should avoid what can be the strongest asthma triggering chemicals present in conventional cleaners such as bleach, hydrochloric acid and ammonia. And as we discussed last week, these chemicals are often mixed together to create an even more dangerous combination. Next go out and buy yourself non-toxic, biodegradable, green cleaning products.
1. Gather all your cleaning products and read the labels.
2. Notice how dangerous and toxic they are. Then, take a deep breath (but not near the cleaning products).
3. Take all the ones that say “danger,” “poison” or contain chlorine bleach and ammonia and put them in a garbage bag.
4. Call your local sanitation department and ask them how to dispose of them safely.
5. Buy green cleaning products, and breathe deeply and safely.
By the way, my son is 11 and hasn’t been to the emergency room in 1,825 days. But who’s counting?

The immune system is the body’s “wellness warrior” so it is important that we give it the ammunition it needs to fight the bacteria, parasites and toxins that cause infections and diseases. Strengthening the immune is the single most important thing we can do to stay healthy.

There are a number of external factors that can adversely affect our immune systems. Toxins in the environment can either suppress the immune system or cause it to “overact” to allergens. Sleep to Slim Down


Shakespeare called sleep the "balm of hurt minds," but had he written Macbeth in this century, he might have added "hurt bodies." More to the point (but far less poetic), he might have said it was the balm of fat bodies. That's because recent research has shown that sleep deprivation can have a significant impact on your ability to lose weight. The major players in this snooze-lose link are two hormones, leptin and ghrelin. Lack of z's results in lower levels of the appetite-suppressing leptin and higher levels of the appetite-boosting ghrelin. Compounding this hormonal glitch is the simple fact that when we sleep less, we have more opportunities to eat. Also, when we're tired from lack of sleep, we have less resolve to fight cravings and mindless munching.
The obvious solution to this problem is to get more sleep — aim for at least 7 hours a night And before you say "impossible," think about this: One study showed that the difference in amount of shut-eye between obese subjects and slim ones was about two hours a week — that's only 17 minutes more sleep per night!
